Shopping List:
3-4 lb chuck roast
1 packet ranch seasoning
1 packet au jus gravy mix
1/2 - 1 stick butter
4-8 pepperoncini peppers + 2 tbsps juice
1/2 quart beef stock
2 onions
1 head of garlic
rosemary and thyme
AP Seasoning
Slurry - 3 tbsps cold water and 3 tbsps corn starch to thicken gravy
Directions:
Allow roast to come up to room temp. Season generously. Heat dutch oven or skillet over high heat and add avocado oil. Sear meat on all sides for 2-4 minutes or until a nice crust develops - then remove. Discard any burnt oil and add in butter. Once butter melts, add in your flour and cook for 1-2 minutes. Add 1/2 of your beef stock and deglaze the pan. Add in garlic and mix to combine. Add onions and then add back in your roast. Mix in ranch packet and au jus gravy mix. Add peppers and some of the juice from the jar. Toss in a sprig of rosemary and cover with a lid. Place in a 350 degree oven for 3-4 hours or until the roast passes the fork test (should be fork tender and shred easily). Enjoy!

Got mine going in the slow cooker and it smells unbelievable. My store was out of Ranch Seasoning, so used a “beefy onion” gravy mix in addition to the Au Jus mix. I can already tell it’s gonna be money! Thanks for all your work, and I’m a huge fan. I’ve made at least a dozen of your recipes and they are all pure magic.❤

OMG!!!!! This roast is a whole entire "situation". I made it today for Sunday dinner, along with green beans, buttery mashed potatoes and hawaiian rolls. The roast was AHHH-MAZING!!!! It's soooo flavorful, extremely tender and completely falling apart. The juices made the best gravy I've ever had and the pepperoncinis gave it a nice little kick, but not spicy at all. This is going to be my "go to" roast recipe forever. Thanks so much for sharing it .

I like to use equal parts of oil and flour depending on how much gravy I want to make. But can you really make too much gravy!! Once your flour is good and brown, pour HOT chicken broth in and whisk whisk whisk it. Then add garlic powder, black pepper and salt to your liking. I usually add some Cajun seasoning to mine like “slap ya mama.” Once it’s thick or thin enough to your liking. With the chicken stock be careful how much salt you add. Enjoy!

All of this guy's recipes look INCREDIBLE! I am ALWAYS in AWE of his technique and final presentation. Even more impressive for me is that he wears gloves during cooking. I'm big on sanitation and he definitely is on point all the way around in the Kitchen. He's kinda funny too he could definitely see him on television hosting a cooki ng show and interviewing various guests. He's a star!!

I may not have made ‘this’ exact roast. However, I have learned SO MUCH about seasoning and browning meats..and..searing meats! I..was so proud of myself for searing the roast I am cooking right now! Made the the support ‘party’..added the roast back..back in the oven..for an ‘over night’ oven roast! I can’t wait for morning! Feels like..waiting on Santa!

I made this along with your mashed potato recipe and it was absolutely DELICIOUS. I will only make my post roast this way going forward. As a side note, I only seasoned my chuck roast with black pepper, onion powder, and garlic powder. No extra salt was added outside of the salt contents in the ranch packet and au jus gravy packet. Flavor was on point. Also, I peeled my head of garlic so that I wouldn’t have to discard it since I love garlic. Awwww, this was so good.

I don’t make my roast any other way now since I discovered the recipe on Pinterest, but I use Lipton Beefy Onion soup packet instead of au jus, and I just leave that sucker in the crock pot. My niece requests it all the time. It’s hella good 💪🏾

As much as I love your recipes (I’ve made 4 so far) what confuses me is the difference in your video and in the actual recipe (which sometimes varies greatly!). For instance in this recipe, you say in the video to use chicken stock but the recipe says beef stock. Also in the video you don’t use flour in the butter but in the written recipe you say to use it. These are only 2 of many differences. This is not to throw shade whatsoever, just to make you aware of the confusion. I’m gonna keep making your recipes though!!

This is almost exactly how I make my pot roast. I do like to add carrots, celery, and baby potatoes and I like to add a little dash of worst word in the world sauce. That's the only difference.

I've made this one and it's not overly spicy. The pepperoncini juice amount makes a difference in spice level, I just added 1/4 c. juice and 8-10 peppers. And yes it's a fork drop.

I haven't had Papa John's in years but I always loved those pepperoncinis they give with the pizza. I will for sure make this next time I make pot roast. Only I wish I had it in front of me right now. I like to eat pot roast with some good buttered bread. You have no idea how much I wish I could eat your food everytime you post a video. 🥰

Gonna have to try this in the cast iron Dutch oven I just got. One thing I’d add in the last 45-60 mins of cooking — before thickening the gravy — is some quartered potatoes, unpeeled new white.

I made this recipe I had to replace the peppers with jalapeños deal worked. Oh my goodness it’s the best pot roast I’ve ever made. My plan was simple make it early on Christmas day. Take it over to Mom‘s house and have leftovers for the next day. I know there will be no leftovers.

Ok, ok. I can't cook, BUT HOLY SHIT, JUST DID THIS FOR CHRISTMAS DINNER AND ITS BOMB!!! it took me 4 hours at 350°. I didn't need to thicken up the gravy bc it was gravy consistency. It's a little spicy!! Not sure if that's due to the peppers or the AP i used but Delicious!! I made mash potatoes as well so I'm excited to have my family taste it!!

You can alternate the beef roast with a pork roast. Shred it up and serve it on a nice bread.

I lost the YouTube video to the pot roast I like to make, YouTube is crowded with this packet pot roast so much so I can't find the regular one. So I'll give it a try..... WOW. it didn't look that bad to me? or was that a drop the mic thing? You could have use that garlic in the mash. i never throw away garlic. but seriously it looks amazing.
