Shopping List:
1 lb hot or mild Italian sausage
1 onion diced
3 cloves minced garlic
6 cups chicken stock
1 cup heavy cream
5 slices bacon
2-4 russet potatoes
3 handfuls chopped kale
2 tbs better than bouillon roasted garlic
1/4 cup parmesan cheese
salt, pepper, garlic, onion powder, Italian seasoning, red pepper flakes
Directions:
In a large pot over medium heat, cook bacon. Remove bacon when finished and reserve for later.
Next, cook sausage, breaking up with the back of a wooden spoon, until browned and no longer pink, 5 to 7 minutes. Transfer to a plate to drain.
Add onion and roasted garlic base to the drippings in the pot and cook until soft, then add garlic and cook until fragrant, 1 minute more.
Add chicken broth and potatoes and cook until potatoes are tender, about 20 minutes. (Fork tender)
Stir in kale and heavy cream and bring to a boil. Then, reduce to a simmer and let cook until leaves are tender and bright green. Season with salt, pepper, garlic, onion powder, Italian seasoning, and red pepper flakes to taste. Garnish with shredded parmesan.

Since I work night shift, I browned the sausage and then threw that along with the rest of the ingredients into a crockpot to cook for 6hrs while I slept! It was ready to go by the time I woke up. I took some to work and my coworkers killed it!

I love this soup. I usually make it probably twice a year, it’s the ultimate comfort soup. Especially if you live in Michigan. I love kale too, I tend to have it for breakfast sautéed with some red peppers and onion. Goes well with scrambled eggs and side of bacon. 😊

That Roasted Garlic Better Than Bouillon is MAGIC. It is full of out of this world rich deepening flavor. Honestly, anything you make tastes like it’s been cooking for hours when you add that. It’s unbelievably delicious 🤤♥️

One of my favorite soups. I love soups with sausage. I add cannelini beans in mine. I'm not sure if it counts as zupa tuscana but it's what I like. I need to make me a big pot of this. 😋

Just made this never had it before but it’s fire. Paired it with some of the box red lobster biscuits. The hardest part was trying not to eat all the bacon waiting on the potatoes lol

This is one of my favorite soups and I make it almost exactly the same way all year round. The only thing is I'm on low carb so I leave out the potatoes and add celery and extra kale. My husband even loves it

I was on keto and used cauliflower instead of potatoes and it is delicious. My family members who were not keto loved it as well. I have made it with potatoes since, but I prefer it with cauliflower.

So funny this popped up today - going to my brother's house for Christmas tomorrow, whose Christmas Day tradition for the past few years is take out from Olive Garden, soup, salad and breadsticks, and it's always this soup. A few years ago, I found a keto recipe that used turnips instead of potatoes, made it and asked the fam which one they liked better. I already knew the homemade version was much heartier, and they did like it. But they like the convenience of not having to cook on Christmas Day (and I already cooked most of our Thanksgiving meal!) so Olive Garden it will be. But believe me, I will be making your recipe for me and my son next week!! Thank you and Merry Christmas!!

Please post your description information with the recipe as a pinned post in the comments. Getting the description info on YouTube can be a pain depending on your device. Also improves accessibility for all. Your International fans can use the translation feature in the comments which don't work in the description on some devices. Love your content and collabs. I'm a potato and kale lover so I add way more kale and new and gold potatoes for that potato happy profile. For non kale lovers try with baby kale or spinach added to the bottom of your bowl, then label on piping hot soup to wilt your greens. Just know putting spinach in the soup why cooking will make the spinach soggy. It doesn't hold up in this soup.

I began making this 4yrs ago after eating at OG. Oh my, its sooo delicious!!! Easy recipe & you'll have leftovers. Its a one pot meal, except for me. The Italian sausage I buy produces a red grease, so I fry in separate pan. Easy breazy, super comfort food!!!

I make it at home sometimes but something tells me yours is better, so I will watch and make it exactly like yours the next time. I love this soup so much. I literally have been craving this soup & have been wanting to make it again. I don’t eat pork so I use beef bacon & turkey Italian sausage. Soooooo good!!! I’m going to make me a vegan non-dairy version using vegan cheese, and beyond sausage. I know it’ll be good! Thanks for sharing!!!

@Nikia Jones, thank you so much for sharing this! I’m in New Orleans. We have plenty of food options but with the way things are right now, many supplies are not available or run out. However, I think I have only seen beef bacon one time in my 62 years. I actually really wanted to know where you got it … such as a local mom & pop grocery store or a big box store. If there is a particular brand name, that would help. Thank you so much! 🌺

@Queenie Maja not sure what city/town you’re in your local grocery store should carry it presliced and it would be with the other bacons (turkey/pork) or you can get it sliced from your deli where they slice the lunch meat at. Or try a meat place that specializes in carrying different meat options. Hopefully that helps because I know it’s not very popular as ppl tend to eat pork mainly a whole lot.

This looks like a good recipe – very similar to something I make all the time. There were a couple of red flags that I would caution potential cooks about. Number one, if you use the Better than Bouillon, any kind of BtB, you should be very aware of what a salt bomb it is, and perhaps use low sodium chicken broth to avoid your soup becoming overly salty. Secondly, if you decide to use half-and-half, instead of cream, be absolutely sure that you do not let the soup approach the simmer, or you’ll just have a curdled mess. Cream won’t do that.

I substituted the cream with coconut milk and I added a splash of dry sherry and went to soup heaven baby! I always use coconut milk in place of milk because it adds way more flavor.

I just made this and it’s SOOOO GOOD! Super easy … even for someone who is admittedly cooking illiterate. I didn’t use bacon bcuz I thought it too much with sausage, and I used red potatoes instead russet. And I was xtra with kale. It still so flavorful! 😋 Super happy with how it turned out. Thank you!

I make this soup all the time!! I could eat it every day also. I add lots of mushrooms & spinach instead of kale. Just a personal preference. And I don’t put much potatoes in the soup because I am diabetic. I also add a cup of wild rice blend & carrots 🥕 shredded i use Old Bay Seafood Seasoning So Yummy!!!

I make this all the time. Yours look good but I never add the kale to the whole soup unless you plan to eat the entire pot right them. I add the kale to each bowl before pouring the soup over it. This is how I make it....I cook the hot italian sausage first, can add more cracked red pepper. I think this gives the bacon more flavor when you cook it next in the same pot too. Set aside with slotted spoon in a bowl with papertowel to drain grease off. Then pour out the remaining grease. Add the bacon to same pot, cook til crisp, set aside on papertowel. Drain grease. Can add some EVOO to cook the onion and I add the chopped fresh garlic the last minute or two when onion is done. Then I add my water and bouillon cubes. Sometimes I use chicken broth or stock if I have some. But always use some bouillon it has so much flavor/salt. Cut potatoes to bite size or tad larger, add to broth, bring to boil until potatoes are fork tender or a bit before, I dont like when they get too soft. Add the sausage and crumbled bacon back in and a cup of cream, half and half or even just milk. Heat through. I put ripped up kale into a bowl and pour the hot soup over it and mix it up letting the kale cook a min in the hot soup. I usually get a nice baguette to have with. Some times parm cheese baked in pieces of baguette or sprinkled on the soup. This is one of my favorite meals actually of all-time, this soup has so much flavor. ETA: the last time I had this at OG I thought how much better mime is at home! I've been making it so often for so many years I think I perfected it.

6:28 I use to use hot sausage. The mild and/or sweet has worked best for me. I add my own heat. It’s not the flavor to me. It’s no matter how much you strain and/or drain the hot sausage, it stains my soup red or gives my soup a hue that I’m not going for. It smells good and taste amazing with the hot sausage. I just don’t like the look. Been making this soup for years after a visit to Olive Garden. Then they had the nerves to pull it from the menu for a period of time. But homemade is the absolute best. If you ever make it and it is too soupy. Mash some of your potatoes. But if you don’t want to do that, add a spoon full or two of instant masked potato flakes. A little goes a long way. This is the best soup ever. I will eat it all year long. But especially late fall and winter.

But wanted you to kno what else you cld do with Kale tht is delicious 😋make kale chips! cut it up n roast it, put your favorite seasonings on it n when they come out they are crunchy like chips. Very tasty!!!

This is my favvvv soup at Olive Garden. I Google this copy cat recipe yeara ago and make it just like this but I also add in a little bit of corn starch. Gives it a little just a little thickness. Don't use a lot because it's still a soup. Just to add a creamier texture to that broth.

I like making palak curry with kale, arugula, even brussel sprouts or asparagus. I just toss whatever I have into a blender and by the time all the spices hit it no one is the wiser.

Love this soup. However one thing I do different is not add the cream to the pot. I add it to individual servings. Keeps it fresher.
