I had that issue when I went from cooking/starting dinner for my parents and siblings (7) to married and cooking for two! I made enough for an army, just out of habit! On top of that my husband wouldn’t eat leftovers! Picky o.0

My family loved this and it was way easier to make then I thought. Normally when I make lasagna I use cottage cheese instead because we don’t like the flavor of ricotta. However with this recipe my very picky children loved the “cheese ball”😂😂. I served it with garlic bread. Thank you!

That's what I think every time I see someone put in all the seasonings first then drain the excess fat, along with half of the seasonings. I NEVER do that!!! I always drain the fat FIRST!!!

There is a different recipe I’ve tried that uses ground sausage and a more narrow lasagna noodle made by several makers. I don’t usually make lasagna with sausage but it was delicious in this soup and added extra flavor. Thanks for sharing your recipe ❤

@Mr. Make It Happen as does yours! I found the noodle package in the pantry, they’re Pastene. Once you break them up they stay on the spoon nicely!

OMG I made this last night for my family and lets just say I made a big pot however i had to buy lunch today for work it was AMAZING the pot was empty.

Omygoodness! Made this second Saturday January 2023 while dismantling the Christmas tree. Didn't have the AP seasoning but this turned out fantastic! We all loved it and the house smells heavenly. Made extra cheese sauce for French bread. I mean this was knock your socks off delicious. The family wants it again next week. Don't forget the crusty bread and red wine to accompany.

I've seen this lady add mozzarella and parmesan on hers and w/ the ricotta, the parm, and the mozz towards the end, it gives a beautiful cheese pull.

I’ve made lasagna soup before and it was delicious! It used pasta with ruffled edges, maybe REGINETTI? But I think the use of Boursin is genius!

I think I'm the only one out of hundreds that tried this and it didn't turn out like I wanted. I think I will try again. I think my problem was in the brand tomato sauce and tomatoes I used. They gave it a bitter acidity taste that I couldn't get out. I put sugar in,but was on the verge of being to sweet. I'm wondering if a good Italian brand of tomatoes and sauce would of made the difference I was looking for. Still it was ok, eatable, no fatalities, LoL

I'm definitely going to try this. However, I'd break the lasagna noodles into pieces that are closer to bite-size. A third of a whole noodle seems like it will be too awkward/large to eat in one bite.

Looks delicious, but I've found that when making soup, you do not want anything that is larger than the spoon because it has a tendency to fall off and splash soup all over your clothes.
